After strict yield controls, the harvest is
entirely handpicked, with a sorting of
the grapes, if necessary.
We don’t like to interfere, we prefer the expression of the fruit rather than too much extraction.
We let the grapes sit in a vat for about 15 days for our red wines, followed by pneumatic pressing.
An aging process in oak barrels for 12- months will complete the ripening of these wines.
